CHIPOTLE ROASTED BUTTERNUT SQUASH
Ingredients 1 Tbs. Oil

2-3 lbs. Butternut squash, peeled, seeded & cubed

4 oz. Butter, cut into cubes

1/3 Cup Dr. Pete's Chipotle Grilling Sauce

1 Tbs. Dried thyme leaves

Kosher salt to taste
Directions

Pre-heat oven to 400 degrees. Lightly brush shallow pan with oil. Spread squash in single layer in pan. Dot with butter and drizzle with Dr. Pete's Chipotle Grilling Sauce. Sprinkle with thyme and salt. Cover and roast 30 minutes, stirring occasionally. Serve immediately or cool to room temperature. Cover and refrigerate. Reheat before serving.
