CHIPOTLE SHRIMP WITH BACON AND TOMATOES
Ingredients 2 lbs. large shrimp, peeled and deveined

1 lb thick sliced bacon, cut in 1/2" strips

2 cups onions, diced

1 bell pepper, diced

2 cloves garlic, crushed

1/2 cup Rum (preferably dark)

3 cups diced canned tomatoes

Salt to taste

1/4 cup cilantro, chopped

3 Tbls. Dr. Pete's Chipotle Grilling Sauce

Directions

Cook bacon in heavy bottom pan until about half the fat is rendered. Add onion and garlic. Saute until onions are lightly colored. Add shrimp and saute over medium high heat until pink on both sides. Pour in rum and continue to cook 1-2 minutes. Reduce liquid slightly.  Stir in tomatoes, Dr. Pete's Chipotle Grilling Sauce and salt.  Bring up to a simmer, stir in cilantro and cook another 5 minutes. Serves 6+

This is excellent served over grits, rice or pasta!
