FIESTA BROWN RICE SALAD
Ingredients 1/3 lb brown rice (cooked)

1 cup spring onions, chopped

2 tsp. chopped canned Jalapenos or green chilies

1 bell pepper, chopped rather small (yellow if available)

1 cup canned kernel corn

1/2 cup rinsed black beans

1/2 cup chunky salsa (medium hot)

1 large firm tomato, chopped

1/2 cup chopped fresh cilantro

1/8 cup Dr. Pete's Southwest Lime Dressing

Directions

Toss all ingredients and let marinate before serving. This is best served at room temperature.
