Ingredients Courtesy of Emily Poole with Shiraz's in Athens, GA

2 Tablespoons Dr. Pete's Southwest Lime Dressing

1 tomato, chopped and drained

1/2 can black beans, drained well

1 oz. fresh chevre

8 baguette slices

 PS-we added canned corn, chopped onion, and chopped cilantro.
Avocado would also be good!  This will make more and you will need more baguette slices, chevre cheese, and Southwest Lime Dressing.

Toast baguettes slices. 

In a small pan, heat tomatoes, Dr. Pete's Southwest Lime Dressing, and beans. (you can add other vegetables like we did!)

Smear toast with cheese and top with warm sauce mixture.

Serve immediately.
