JANE'S BUSY DAY CHICKEN SALAD
Ingredients 1 rotisserie chicken from grocery store

1 cup uncooked orzo, or whatever pasta you happen to have in the pantry

3 stalks celery, chopped

1 red bell pepper, chopped ( could use green, yellow, or orange)

1 medium onion, chopped

1 can whole/pitted Calamata olives

1/4 cup toasted slivered almonds

Dr. Pete's Parmesan Garlic Dressing  
(made according to directions for dressing)


Directions Cook pasta according to directions. While pasta is cooking, de- bone chicken and cut up for salad. Mix together cut up chicken, cooked pasta, chopped vegetables, calamata olives and almonds. Use as much or as little of the vegetables as you like. Dress with Dr. Pete's Parmesan Garlic Dressing.  Serves 4-6.
