Ingredients Burger Ingredients

1 lb lean (at least 90%) ground beef

1/2 lb bulk chorizo sausage crumbled

1 TBL Dr. Pete's Chipotle Grilling Sauce

1 egg

3/4 teaspoon salt

4 slices (1 oz each) White Cheddar cheese

1 red onion, sliced

Lettuce, if desired

4 hamburger buns

Chipotle Mayonaise

1/4 cup mayonaise

1 TBL Dr. Pete's Chipotle Grilling Sauce
Combine burger ingredients, except cheese, onion and buns in mixing bowl.
Mix well and shape into 4 burgers.

Make Chipotle mayonaise by combining the two listed ingredients and store in refrigerator until ready to use.

Prepare grill for cooking.  Place patties on grill over medium heat. Cover grill; cook 11 to 13 minutes, turning once, until meat thermometer inserted in center of patties reads 160°F.

Place cooked patties on buns, add cheese, onion slices, lettuce and chipotle mayo to taste.

Serves 4.  Goes great with a cold Pale Ale, like Sierra Nevada.
