Ingredients 1 6-oz. Box Uncle Ben's Long Grain and Wild Rice

1 can artichoke hearts, drained and quartered

1 can mushroom slices, drained

1 can sliced water chestnuts, drained OR ¾ cup chopped pecans, large pieces

½ cup chopped spring onions

¾ lb. Shrimp, peeled and deveined (optional)

½ cup Dr. Pete's Burgundy Marinade

2 tsp. Chopped parsley

Directions Boil shrimp 3-5 minutes until done. Cook rice according to directions on box. While rice cooks, pour Dr. Pete's Burgundy Marinade over all other ingredients except parsley. Mix well and turn often. When rice is done, combine all ingredients with rice. Serve immediately as warm main dish or chill for cold salad. Sprinkle parsley over top before serving.

Serves 6 as main dish or 10 as side dish.
