Ingredients  1 Rack of Ribs

Salt and Pepper

Chipotle Grilling Sauce
Directions  Preheat oven to 350 degrees

Start by cutting the rack of ribs into 2 or 3 rib sections.  Generously sprinkle the top and bottom of each piece with salt and pepper.  Place all pieces onto a foil base large enough to cover all the ribs.  Brush on Dr. Petes's Chipotle Grilling Sauce to the top and bottom of each piece then cover with the foil.  Place foil packet on roasting pan and place in oven when ready.

Cook covered for 1 hour, then open the foil packet, spoon juices on top of the ribs and cook uncovered for 30 mins to brown and crisp them.

Serve with cooked greens and sweet or Idaho potatoes.
