Ingredients  Dr. Pete's Pimento Cheese dressing
3 medium green tomatoes
1 cup flour
1 cup ground corn meal
2 cups buttermilk
1 tsp paprika
1 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
vegetable oil for frying

Directions  Start by rinsing your tomatoes and slicing them into 1/4 inch thick slices.  Place them aside, and salt and pepper each side of the slices.  Let them rest for at least 10 min.  While you are waiting, prepare two bowls, one with the flour, and one with the corn meal.  Add the salt, pepper, paprika, and garlic to each bowl and mix.  Prepare a third bowl with your buttermilk.

Get your oil to 350 degrees in a cast iron skillet.

Take a tomato slice, dredge in the flour first, dip in buttermilk, then finish by dredging in the corn meal.  Place the slice in your oil and repeat until 4 or five are in the pan.  Be sure not to overcrowd the skillet.  Fry for a total of 3-5 min, and make sure to flip the slices over half way through.  The finished product should be a light golden brown.

Serve with Dr. Pete's Pimento Cheese Dressing on the side and enjoy!
